Creamy Mash with Chives

Cauliflower mash is the perfect alternative to white potatoes. Zhuzh it up with sea salt, pepper, and vegan butter or olive oil for a delicious side dish.

Ingredients

  • 1 medium head cauliflower, cut into florets

  • 1 whole bulb of garlic

  • 3 tbsp olive oil, divided

  • 1/4 cup unsweetened almond milk

  • Salt and pepper to taste

  • 2 tbsp fresh chives, chopped

  • 1/4 cup toasted pine nuts

Method

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with 1 tablespoon olive oil, and wrap in foil. Roast for 25-30 minutes until soft and caramelized. When done, squeeze the cloves out of their skins and set aside.

  2. Meanwhile, bring a large pot of salted water to a boil. Add cauliflower florets; cook for 10-12 minutes; drain well.

  3. In a skillet over medium heat, add 1 tbsp olive oil. Sauté cauliflower for 2-3 minutes to remove excess moisture.

  4. In a food processor or blender, combine the cauliflower, roasted garlic, remaining olive oil, almond milk, salt, and pepper. Blend until smooth and creamy.

  5. Transfer to a serving dish and sprinkle with chopped chives and pine nuts for crunch. Serve warm - enjoy!

Notes

  • Time-saver: Use frozen cauliflower rice instead of fresh cauliflower. Skip step 2 and continue with steps 3 - 5.
