Broccoli Salad

Traditional broccoli salad, redesigned with a healthy yet tasty dressing and modern, fresh flavors.
Ingredients
4 cups broccoli florets
1 cup red grapes, halved
1/2 cup slivered almonds, toasted
1/4 cup finely chopped red onion
1/2 cup plain Greek yogurt
2 tablespoons apple cider vinegar
1 tablespoon raw honey
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
Method
Blanch the broccoli florets in boiling water for 1-2 minutes until they are bright green and slightly tender. Immediately plunge them into ice water to stop the cooking process. Drain well and pat dry.
In a small pan over medium heat, toast the slivered almonds until they are golden brown and fragrant, stirring frequently to prevent burning. Set aside to cool.
In a small bowl, whisk together the yogurt, vinegar, honey, salt, and pepper until smooth and well combined.
In a large mixing bowl, combine the broccoli florets, grapes, almonds, and onion. Pour the dressing over the salad and toss until everything is coated. Enjoy!
Notes
Use unsweetened plain non-dairy yogurt, such as cashew or coconut, instead of Greek.
