Pumpkin Spice Latte Recipe

Try my healthy yet tasty version of the fall classic PSL and you can be sure there’s zero dairy, half the sugar, and all the amazing flavor and cozy feels.

INGREDIENTS

  • 3/4 cup strong coffee or espresso

  • 3 tablespoons pureed pumpkin (canned)

  • 2 tablespoons maple syrup

  • 3/4 teaspoon pumpkin pie spice

  • 1 1/4 cup unsweetened almond milk (or oat milk)

  • 3/4 teaspoon vanilla extract

METHOD

  1. Brew the coffee or espresso and set aside.

  2. In a saucepan over medium heat, stir the pumpkin, maple syrup and pumpkin pie spice until combined. Slowly whisk in milk. Bring mixture to a low simmer, stirring occasionally and remove from heat. Stir in vanilla extract.

  3. Using a hand-held immersion blender or frother, pulse several times until foamy and frothy, being careful not to splatter the hot liquid. (You can also transfer the milk mixture to a blender instead.)

  4. Add milk mixture to the hot coffee. Top with a dollop of homemade whipped cream or coconut whipped cream (optional) and sprinkle with additional pumpkin pie spice. Enjoy!

NOTES

  • Makes 1 serving, approximately 16 oz.

  • Adjust the amount of milk, maple syrup and spices to your taste.

  • If you don't have a blender, whisk vigorously by hand when the milk mixture starts to simmer on the stove. This will not create the same froth as a blender or immersion blender but will still be tasty and light.

  • For an adult version, add a shot of dark rum, bourbon or cognac.

  • Dairy free and gluten free.
